Tomato soup
Description
A quick and easy tomato soup
Ingredients
- 1 onion (a large one or two smaller ones)
- 2 garlic cloves
- 2 tbsp olive oil
- 1 tbsp paprika
- 1 tbsp Worchester sauce
- 1 tbsp tomato puree
- 1 tsp red pepper paste (optional)
- chilli paste/sauce to taste (around 1 tsp of the paste)
- 1 tbsp dried basil
- 1 carrot (cut into slices)
- 100 ml red wine
- salt
- black pepper
- 2 canned/jarred tomatoes (Can be swapped for 1 jar of tomato and 1 jar of tomato sauce/juice)
- 600 ml vegetable broth (If you're using tomato juice reduce the stock to 300 ml)
- 2 tsp sugar
- Fresh basil
- Dairy cream
- Croutons

In a large pot heat the olive oil and add the onion. Sweat for 2-3 minutes and add the garlic.

Add the spices and herbs, chilli paste/sauce and Worchester sauce. Cook for another 2-3 minutes.

Deglaze the pot with the wine and add the carrot.
- 1 carrot (cut into slices)
- 100 ml red wine

Add the tomatoes and wash out the jar by pouring the needed broth (if using) and let it come to the boil.
- 2 canned/jarred tomatoes (Can be swapped for 1 jar of tomato and 1 jar of tomato sauce/juice)
- 600 ml vegetable broth (If you're using tomato juice reduce the stock to 300 ml)

20 minutesAdd the sugar and let it simmer.

Remove from the heat and let it cool. Adjust with water for the desired consistency. Blend and return to the heat to serve warm with chopped basil, a little cream, croutons and black pepper.
