Sundried tomato soda bread
Description
Quick soda bread ready in about an hour with tasty and fragrant herbs.
Ingredients and equipment
Main ingredients
- 450 g Flour (You can use white flour or a mix of equal parts white and wholegrain flour.)
- 300 g Yoghurt
- 30 g Sundried tomatoes
- 1 Onion
- 1 tbsp Olive oil
- 1 tsp Bicarbonate of soda
- 1 tsp Oregano
- 1 tsp Salt

2 minutesChop the onion finely.

5 minutesSaute the onion in the olive oil for 5 minutes or until soft

2 minutesChop the sundried tomatoes in small pieces.
- 30 g Sundried tomatoes

3 minutesIn the bowl mix the flour, soda, tomatoes, salt, oregano and onion.

5 minutes30 minutesMix well and add the yoghurt. Knead into a dough and let it rest for about 30 mins.

200 °CPreheat the oven with the fan on.

Line a baking tray with baking paper.

2 minutesMake a round shape from the dough and place on the tray. Make 4 cuts across the dough like an X making sure not to cut all the way down to the bottom. If you wish you can make another X cut so that you get 8 trianglular sections.

30 minutes200 °CBake, taking care not to burn the top. If it starts to get a little dark you can: 1. Place some alluminium foil on top of the bread. 2. Place another baking tray on a rack above the dough. 3. Switch your oven to a setting baking only from the bottom, if you have it.
